Coconut Curry Shrimp
1 bag frozen peppers and onions ( or fresh 2 peppers and 1 yellow onion)
In large cast iron pan, heat up olive oil and add curry spice
Add vegetables and sautéed
Add shrimp and coconut milk
To thicken, add small amounts of arrow root until gets to your desired thickness
Serve with rice or other protein sources
